Mexican Wedding Cookies for Kevy's Spanish class


AKA russian tea cakes, or snowballs. Not the best picture, and this was pre-second powdered sugaring. Used Kevin paying me to make cookies for his Spanish class as an excuse to try making these. The one I stole was pretty rockin and Dad enjoyed the ones I saved for him. Update later when I find the recipe I used.

Granola

Recipe here (except we used maple syrup instead of honey and added 1/2 cup coconut). Soo good. Just Mom made it this time. It's getting better (the first time we left it in a bit too long), but it's still not clumpy like granola you buy, so we'll try more brown rice syrup next time.

Tarragon-Lentil Stewish Soup (Vcon)
Awesomely chunky because I love soup but I need something to chew. And I could snort tarragon.

And because I love popover muffin tins...
A comparison of a blueberry corn muffin from a regular muffin tin and a monster one from a popover muffin tin, with the batter's worth of two regular muffins. Much love.

Chickpea Romanesco and Mexican Millet (both Vcon)




Orange Cranberry Nut Bread

Beer Bread (whole wheat)

AKA The easiest bread in the world and best way to use up beer neighbors and family brought over on Christmas.

Whole Wheat Beer Bread

2 cups whole wheat flour
1 cup all-purpose flour
1 Tablespoon granulated sugar
1 teaspoon salt
1 Tablespoon baking powder
1 bottle o beer

Preheat oven to 375. Mix dry, add beer, pour into greased 8 inch loaf pan.
Bake about 45 minutes, cool in pan about 10 minutes, then on a cooling rack.
Eat.

Coconut-Strawberry Cake

Coconut cake (coconut heaven cupcakes, VwaV) with strawberry jam between layers, coconut frosting (VwaV), topped with strawberries. This is why you should have gone to the Project Memorial spaghetti dinner.

REVIVED!

I haven't done anything with this in over a year! Now I actually have a nice camera so I can take decent food porn.

A hodgepodge:
Breakfast:
Sunny Blueberry Corn Muffins (vwav)
First time using big popover muffin tin.

Chocolate Chip Muffins (altered mocha chip muffins, ppk), for Jojo's birthday


Note the Spongebob liner.
Chocolate Chip Muffins

1 3/4 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup soy milk
1/2 cup canola oil
2 tablespoons soy yogurt
1 teaspoon vanilla extract
1/2 cup chocolate chips

Preheat oven to 375, mix wet, mix dry. Mix wet into dry.
Evenly distribute into 12 lined muffin tins.
Bake 18-20 minutes, when a toothpick stuck in the middle comes out clean.

Dinner:
Pizza (with herbed whole wheat crusts, Cupcake's italian sausage, buncha veggies, some faux mozzerella), thanks to Mom

Mom's had tofu ricotta on the bottom while mine had tomato sauce. The chreese wasn't bad, not plasticy like some. I think it was Follow Your Heart brand Mozerella.

Dissapointing, but we were kind of making it up. It probably would have been good if we used actual ravioli shells.

BEETS

Unfortunately I don't have a pic of the autumn latkas they went into, and I discovered I don't like beets after making them.

Made for someone I work with at the Inn who recently went veg. It was months after her birthday but I only see her a couple times a year.

Some have rhasberry jam, some strawberry.
First try and they came out awesome.

Peanut Butter-Carob-Banana Cupcakes

Made this afternoon since I wanted something sweet. Started with a chocolate banana cupcake recipe off ppk.com, found out we have no cocoa, used a bit of left over snickerdoodle topping (cinnamon, cocoa, sugar) and carob chips, topped with plain ol' peanut butter. Shoved one right out of the oven in my mouf and it was yummilicious-
Ahh! Yummilicious!


So I guess the final recipe was something like;

3/4 cup sugar
5 tbsp vegan margarine
1 tsp coconut extract
1 banana mashed well
1 cup flour
about.. tsp cocoa powder, cinnamon, and sugar each
1/2 tsp baking soda
1/2 cup soymilk
half a bag of carob/chocolate chips

At 350 for about 20 minutes, makes 12-14.
